Ingredients of Broken Rice (Com Tam) in Hoi An

The ingredients of broken rice (com tam) in Hoi An are:

+ the rice base

  • broken rice grains: the dish’s namesake. These are fragmented rice grains that are a byproduct of the milling process. When cooked, they have a slightly different texture—softer, slightly sticky, and absorbent—than regular rice.

+ main protein (usually one or more of the following)

  • grilled pork chop: a thin, marinated pork chop (often bone-in) that is charcoal-grilled until tender and caramelized, giving it a smoky, sweet, and savory flavor. The marinade typically contains lemongrass, fish sauce, sugar, garlic, and oyster sauce.

  • shredded pork and pig skin: thin strips of cooked pork and julienned pig skin mixed with roasted rice powder. This gives the a unique nutty flavor and chewy-gritty texture.

  • steamed pork and egg meatloaf: a steamed custard-like patty made from ground pork, wood ear mushrooms, glass noodles, and eggs. It often has a thin layer of egg yolk brushed on top for color.

  • fried egg: a simple sunny-side-up fried egg is a very common addition, sometimes substituting the .

+ essential garnishes and sides

  • scallion oil: a drizzle of oil infused with finely chopped scallions. This adds a beautiful aromatic richness to the rice.

  • fresh vegetables: slices of cucumber and tomato for a fresh, cooling contrast.

  • pickled vegetables: typically julienned pickled carrots and daikon radish, which provide a necessary tangy, crunchy, and sour element to cut through the richness.

+ the dipping sauce

This is arguably the most critical component, tying the entire dish together. It is a sweet, sour, salty, and spicy dipping sauce made from:

  • fish sauce

  • sugar

  • water (or sometimes coconut water/soda)

  • lime juice or vinegar

  • minced garlic and chili

How to Eat Broken Rice (Com Tam) in Hoi An

Here is a step-by-step guide on how to eat Broken rice (Com tam) like a local:

– pour on the dipping sauce

This is the most crucial step. Broken rice (Com tam) is designed to be a “wet” rice dish, and the plate will often have its own small dish of the sweet, tangy, salty, and spicy fish sauce.

  • drizzle generously: Pour the dipping sauce directly over your rice and the other toppings (grilled pork, egg meatloaf, shredded pork skin). Don’t be shy—the rice is meant to absorb the sauce for maximum flavor.

  • optional: If you like heat, grab a fresh chili from the side and slice it into your sauce before pouring.

– mix and combine

Unlike Western dishes where you keep your protein and sides separated, the broken rice is best when you get a little bit of everything in each bite.

  • break the yolk (if you have a fried egg): If your plate includes a sunny-side-up egg, break the yolk and let it run over the rice and other ingredients. This adds a rich, creamy texture that locals love.

  • mix gently: Use your spoon and fork to gently toss and combine a portion of the broken rice, a little of the shredded pork skin, a piece of the steamed egg meatloaf, and the rice-soaked with dipping sauce and scallion oil.

– take a perfect bite

The goal is a harmonious bite that hits all the flavor notes:

  • The spoon is key: scoop up a spoonful that includes a piece of the grilled pork some of the flavorful broken rice, a bit of the pickled vegetables, and maybe a slice of fresh cucumber or tomato.

  • contrast is the flavor: the crunch and sourness of the pickled vegetables and the freshness of the cucumber/tomato are essential to balance the rich, fatty grilled pork and the savory egg components.

– use the fork and spoon

  • Spoon: Use the spoon to scoop up the broken rice and sauce.

  • Fork: Use the fork to anchor the meat and other large components or to cut the pork chop/meatloaf into smaller, manageable pieces.

– finish with broth

Many broken rice restaurants serve a small, clear bowl of light, warm broth () on the side. This is traditionally sipped between bites of your meal or after you have finished to cleanse your palate.

Better to Know about Eating Local in Hoi An

– Local family-run restaurants always serve better local foods than tourist restaurants. Places inside small alleyways potentially are hidden gems. The price is even more affordable at these lesser known spots.

– Restaurants where you can see a queue or crowds, food or drinks there are absolutely better or safer than others. Vietnamese people also avoid places without people eating, such as roadside eateries.

– Hot foods are often safe to eat for non-Vietnamese people. Refuse cold food (especially ones sold on the street, markets) or things you don’t see people cooking.

– Make sure that you learn some basic Vietnamese words or sentences to order foods, such as xin chao (hello, hi), cho toi mot (something) (I want one…), toi an chay (I am vegetarian), khong cay (no spicy), cam on (thank you), tam biet (goodbye) or numbers (mot/one, hai/two, ba/three, bon/four, nam/five, sau/six, bay/seven, tam/eight, chin/nine, and muoi/ten).

– Ask any local people you know (tour guide, driver, hotel receptionists, bellmen, etc) to receive their recommendation for good places to eat local.

– Raw vegetables are popularly used in local dishes, such as noodles or noodle soup or sandwich. They are often washed by tap water or unwashed. If can not drink tap water, remove or refuse them. Likewise, in most iced drinks (such as coffee or herbal tea), people add ice made by tap water also.

– On the 1st day and 14th-15th days of each lunar month, Hoi An citizens eat vegetarians. Many local restaurants and street businesses will be closed by that.

– If you don’t eat pork or beef, due to diet or religious restrictions, be careful when want to try local food here, if don’t see the ingredient description. Pork and beef are very popular meats, so they will be in numerous dishes. Street vendors may say ‘no pork’ or ‘no beef’ for better business, but please check before buying!

– Consider joining a food tour guided by locals who know much better about dishes in the city, including things never mentioned in guidebooks or on the internet.

– If have an allergy (milk, egg, peanut, wheat,…), ask anybody you know before trying or search for ingredients on the internet. By the way, fish sauce is popularly used to marinate Vietnamese foods, so make sure that you know this information if you’re fish allergic.

– Food portion (or size) here is often not really big (locals prefer eating with their family at home). You may try double or some different dishes for main meals.

– If don’t see the price on the menu, please ask in advance to avoid overcharging, especially when you are not a local. In Vietnamese, how much is bao nhieu.

– Most popular cutleries are chopsticks and spoons. To know how to use it, browse here
