How to Make Ice Cream Roll in Hoi An
In Hoi An, visitors like watching the process local people make ice cream rolls. The process is essentially a live, theatrical food demonstration that engages the customer more than simply scooping ice cream from a tub. Visitors get to select their base flavor and mix-ins (fruits, cookies, candy) and then watch those exact ingredients being chopped and blended directly into their serving. Here are steps to make ice cream rolls:
1. Prepare and Chill
Freeze the Pan: Place your metal baking sheet into the freezer and ensure it is level. It needs to chill for a minimum of 4 hours, but preferably overnight, to get as cold as possible.
Make the Base (The No-Churn Method): The simplest base is mixing heavy cream and sweetened condensed milk in a bowl. Whisk until well combined.
Chill the Base and Tools: Place the ice cream base mixture in the refrigerator (or freezer for about 30 minutes) and place your metal spatulas/scrapers in the freezer for about an hour to keep them cold.
2. Mix and Freeze
Add Mix-ins: Take your super-chilled pan out of the freezer.
Pour the Base: Pour a thin layer of the liquid ice cream base onto the cold surface. Work quickly! (Limit to about 1/4 to 1/2 cup of base per section for a standard sheet pan).
Chop and Mix: Add your desired mix-ins (e.g., crushed Oreos, sliced strawberries) onto the liquid base. Using both scrapers/spatulas, quickly chop and mix the toppings into the liquid base. Scrape it all to the center, then spread it out, chop, and repeat. Continue until the mix-ins are evenly distributed and the mixture begins to thicken.
Spread Thin: Once mixed, use one scraper to quickly and evenly spread the mixture into a very thin layer (about 1/8 inch or less) over a manageable section of the cold pan.
Freeze Again: Immediately return the sheet pan to the freezer and let the layer freeze solid. This usually takes about 30 minutes to 1 hour, depending on how cold your freezer is.
3. Roll and Serve
Remove and Cut: Take the sheet pan out of the freezer. The ice cream layer must be completely frozen but not brittle. Using one of your cold scrapers, press down firmly and use the edge to score the frozen ice cream into vertical strips (about 2-3 inches wide).
The Roll: Hold the scraper at a 45∘ angle to the surface. Starting from one end of a scored strip, push the scraper forward while applying consistent pressure. The frozen ice cream should lift and curl into a roll.
Transfer and Top: Use tongs to quickly pick up the rolls and place them into a chilled serving cup or bowl.
Enjoy: Top with whipped cream, syrup, or other toppings and serve immediately, as they will melt faster than traditional ice cream!

– Local family-run restaurants always serve better local foods than tourist restaurants. Places inside small alleyways potentially are hidden gems. The price is even more affordable at these lesser known spots.
