Better to Know about Banh Mi in Hoi An

Banh mi is a celebrated Vietnamese sandwich featuring a crisp, airy baguette traditionally filled with a savory mix of meats, pâté, and creamy mayonnaise. This culinary staple is balanced by refreshing pickled vegetables, fresh cilantro, and spicy chilies, representing a perfect harmony of French influence and bold Vietnamese flavors.

Hội An’s banh mi is legendary for its distinct baguette, which features tapered, pointy ends and a crust far crispier and thinner than the softer loaves found in Saigon or Hanoi. This unique bread provides a shatteringly light crunch that perfectly encases the rich, house-made pâté and signature savory sauces. The flavor is further elevated by exceptionally fragrant herbs sourced from the nearby Tra Que village, offering a peppery freshness that cuts through the fatty meats. Combined with a spicy chili jam unique to the region, it delivers a more complex, artisanal balance than typical street versions.

History of Banh Mi Phuong in Hoi An Vietnam

Banh Mi Phuong Stall at Hoi An Market

The original Banh Mi Phuong stall is located inside Hoi An Central Market’s Food Hall, on Tieu La Street. When there are many tourists coming to this place, it’s moved to current location (2B Phan Chu Trinh Street), that is only 200 meters away from it.

The owner Ms. Truong Thi Phuong, born in 1963, is the dedicated founder who transformed a humble family food stall into one of Vietnam’s most celebrated culinary institutions. Originally a teacher by profession, she applied her meticulous nature to perfecting a unique recipe characterized by artisanal “pointy” bread and a rich, savory pâté. Under her constant supervision, the shop has remained a family-run pillar of the Hội An community, balancing local tradition with immense international popularity.

At the first location, the stall still has been run by sister of Phuong, and it’s known as ‘Banh Mi Phuong 2’. If don’t want to see the queue, visitors can come here instead of the main shop.

Banh Mi Phuong & Anthony Bourdain

Why is Banh Mi Phuong famous? It gained global acclaim after Anthony Bourdain featured it on his show, praising its perfect balance of fresh herbs, savory meats, and signature sauces as the best banh mi he had ever tasted.

Who is Anthony Bourdain? Born in 1956, Anthony Bourdain was an influential American chef, author, and television personality who passed away in 2018. He rose to international prominence with his raw and witty memoir, Kitchen Confidential, which pulled back the curtain on the gritty reality of the restaurant industry. Bourdain is celebrated worldwide for his immersive travel documentaries, where he used food as a bridge to explore diverse cultures and champion the shared humanity of people across the globe.

Anthony Bourdain: No Reservations is a critically acclaimed travel and food series that followed the host as he explored the authentic flavors and cultural heart of various international destinations. During his 2009 visit to Central Vietnam, Bourdain spotlighted Banh Mi Phuong, famously declaring their signature sandwich a “symphony in a sandwich.” This endorsement transformed the local stall into a global culinary landmark, cementing the show’s legacy for discovering hidden gastronomic gems.

What did Anthony Bourdain eat at Banh Mi Phuong? During his visit, Anthony Bourdain famously enjoyed the Banh mi thap cam (mixed). It features a rich medley of ingredients including house-made pâté, grilled pork, ham, and a signature savory sauce. This combination is balanced with fresh herbs, pickled vegetables, and a crisp baguette, creating the multi-layered flavor profile that captivated international food critics.

Banh Mi Phuong in South Korea

Banh Mi Phuong brought the authentic flavors of Hội An to South Korea in 2019, opening its flagship branch in Seoul’s vibrant Yeonnam-dong district. The three-story building mimics the iconic yellow architecture of the Ancient Town, creating a nostalgic cultural hub. It serves legendary recipes featuring the signature “pointy” baguette, savory pâté, and secret sauces. To ensure quality, the owner personally trained Korean chefs to replicate the Hội An style. While adapting to local markets, the cafe maintains its heritage, offering locals and travelers a genuine taste of world-class Vietnamese street food in a beautifully designed setting.

What to Order at Banh Mi Phuong (Hoi An)?

Top tip: The longest queue at Banh Mi Phuong is in the evening, particularly from 5:30/6:00 to 8:00 PM. To avoid it. Visitors can come in breakfast or lunch time. If plan to see Hoi An at night, skip the line, find a table inside the restaurant, order a banh mi and then enjoy it. Lining up is not a rule at this place, so you don’t have to do it (as other people do).

Banh Mi Phuong has two floors. While ground floor is easily accessible for seniors (because of no steep stairs), the second floor is more spacious for family and group. The restroom is located on the 2nd floor.

We recommend trying Banh mi thap cam (mixed), the most famous option at Banh Mi Phuong Hoi An. This is a crispy baguette filled with house-made pâté, grilled pork, Vietnamese ham, and head cheese, all elevated by their secret savory sauce, buttery mayonnaise, and a refreshing mix of pickled papaya, cucumbers, and cilantro.

If don’t eat much, visitors can try the traditional Banh mi: banh mi thit nuong (with grilled pork).

For vegeterian travelers, of course, the vegetarian banh mi is the best choice. At Banh Mi Phuong, it’s filled by tofu slices, avocado slices, peanut butter, fresh herbs/veggies, and soy souce. If don’t like something, just request direcly to the water/waitress to remove or add into your own sandwich.

All banh mi sanchwiches at Banh Mi Phuong is not spicy. When like eating spicy, visitors can use chili sauce or special Hoi An chili sauce, a distinctive local specialty known for its rich, jam-like consistency and a complex smoky-sweet flavor profile achieved by slow-simmering chilies with oil, garlic, and sugar.

Furthermore, fresh herbs at Banh Mi Phuong are grown and picked at Tra Que Vegetable Village (so they’re known as ‘Tra Que herbs’). The exceptional reputation of the herbs stems from a traditional organic cultivation process that utilizes nutrient-dense seaweed from the nearby lagoon as a natural fertilizer. This specialized agricultural heritage results in greens that possess a uniquely potent aroma and concentrated flavor profile that cannot be replicated in other regions. To know better about Tra Que traditional farming tradition, visitors can join a countryside bike tour or cooking class

Banh Mi Phuong vs Banh Mi Queen (Madam Khanh)

In the world of Hoi An street food, the rivalry between Banh Mi Phuong and Madam Khanh (The Banh Mi Queen) is legendary. While both serve incredible sandwiches, they offer distinct culinary experiences.

We recommend visitors trying banh mi at both shops if possible.

Banh Mi Phuong

  1. The flavor profile: Known for a robust and savory taste. They use a wide variety of fillings—up to 20 options—including grilled pork, ham, and even fried eggs.

  2. The sauce: Their “secret weapon” is a rich, savory gravy and a punchy chili sauce that soaks into the bread.

  3. The experience: It is often crowded and fast-paced. It’s the “commercial king,” offering a high-energy atmosphere and a massive menu.

Madam Khanh

  1. The flavor profile: Generally considered more balanced and refined. The flavors are subtly sweet and savory, with a heavy emphasis on a very smooth, high-quality pâté.

  2. The sauce: Madam Khanh uses a signature fried egg sauce (mayonnaise style) that adds a creamy, buttery finish to the sandwich.

  3. The experience: Usually feels more personal and “old-school.” The late Madam Khanh’s family still maintains a meticulous, assembly-line approach that feels slightly more artisanal and less chaotic than Phuong’s.
