Just a short hop from the bustling docks of the Duy Hai fish market, this traditional workshop sources its fresh, glittering catch directly from the morning boats to begin the production process. Inside, rows of massive ceramic jars and wooden vats slowly ferment the salted fish under the coastal sun, transforming it into a premium, intensely savory sauce prized by local chefs. Noi Rang Market is a lively local trading hub where fishing boats directly land their morning catch along the Thu Bon River. It offers visitors an authentic, un-touristy glimpse into regional life, packed with stalls selling incredibly fresh seafood, local produce, and traditional breakfast dishes.
Rice paper factory
Visit a local family whose members have made rice papers and rice noodles for some decades. One of them will show you the process to make the rice paper by rice milk and then you have the chance to try your hand at making your own rice papers. After that, the artisan shows the way to make the noodles from fresh rice papers and how to make banh dap (‘smashing rice papers’), a specialty food in Hoi An. Try the cake as how the locals do then.
